Finín's interest is in quality food and flavour and is very much hands on from morning till night - cooking and organising front of house. And he personally trains all new members of the team.

Finín's career was a vocation, starting at the young age of 9 in the East End Hotel in his native Schull, Finín began his trade from the ground up learning everything from kitchen basics to general hotel duties. He can throw his hand to any task and trains each of his staff personally so they are capable of the same. After formalising his training at Rockwell College and spending some time in Germany, he then went on to serve his apprenticeship at some of the finest restaurants in Cork. In May, 1978, it was time to take the plunge and open his own restaurant on the main street in Midleton where he still is today. Back in the early days there was only one other pub in the town of Midleton which served only bar food. Finín's discipline of working up to a 90 hour week starting at 6am every morning and working through till after 10pm has helped him to develop the excellent reputation he has earned to date. But thankfully to this day he still loves to open the doors and welcome in the world. Finín prides himself on running a family restaurant, his loyal staff have been with him for many years and even his children have played their part through various roles throughout it's time. Even a piece of his daughter's artwork hangs proudly above the bar.
As Ireland's love of food has grown so too has the competition but Finín has stuck to his routes serving good wholesome food made from the finest of fresh ingredients. Its Finín's motto to support local producers and the bulk of his ingredients are supplied from Midleton and its surrounding area. Specialising in seafood but serving 100% Irish beef and poultry, all of Finín's food is traceable from farm to fork. All dishes are designed to let the true essence of the ingredients shine through.
